How to filter email between 2 dates and exclude deleted emails?

Using an index built on a Outlook file I want to select all emails between 2 dates AND exclude deleted emails.

Alternatively I want to select all emails between 2 dates AND include only emails in the (for example) Projects folder and associated sub-folders.

Using the search prefixes you can search specific attributes:

In your case you can search your 'projects' folder between two dates like this:
