How do you set the software to only keyword search all attachments and messages in PSTs?
To only search PST files you can add +.pst to the Look In field, e.g.:
File name: Containing Text: Keyword Search Look In: C:\Mail;+.pst
Make sure you have enabled Outlook PST/MSG files in the Options tab.
