Office will install the filters but if you're using an earlier version of Office, e.g. 2007, then you still want to install the separate IFilter pack because they're more robust and reliable.
Yes, if you use both 32 and 64 bit version of a product you'll need both filters. Instead I'd recommend using the 64-bit version of both products.
